Canoscan N1240u Flatbed Scanner Problems

kitchen devil pumpkin spaetzle

I have promised to discontinue our current spun pumpkin recipes here. This time it's about a Swabian Specialty (Alex is indeed half Schwabe): Spaetzle.

Yeah ... also can you do with pumpkin, or more precisely the Hokkaido again (if I can still do this fall to process even a pumpkin?).

noodles are indeed such a thing: Some scrape it from the Spätzle board (I have, I do not), the other pressing them through a ricer and I? I have the blessing of the company Tupperware in the house in the form of so-called "Spätzleria. In principle, a slightly rounded plastic board with holes and plastic spatula, but the thing runs great. Said Alex herumätzen must of course that what comes out, at most, "Knoepfle" were no noodles. But anyway, ate it anyway:) Here

"scrape" a little video of the original, with great commentary! :)

Spätze scrape with Schwaben

But now the matter with the

pumpkin spaetzle

Ingredients: 250 g

Hokkaido pumpkin (pure meat) 250 g wheat flour
(alternative is of course Spelt flour vary, then the amount of water) Optional

2 large eggs 200 ml water 2 tsp salt

pepper nutmeg
a few fresh sage leaves 2 tablespoons butter

: fresh Parmesan

Preparation:

of the pumpkin seeds and skins free, cut into small pieces and incubated with a little water in a small pot about 10 minutes. simmer gently with lid. Pumpkin puree.

flour, salt, eggs and water, stirring quickly (also equal to the entire water into it, otherwise lumps), stir in the pumpkin puree. Season with salt, pepper and nutmeg.

The dough is then so far, when he throws in beating and blowing hard from the spoon breaks. If dough is too firm, dilute with water, the other way round tie with flour.

the dough about 5 - 10 min. to rest, then beat again vigorously.

put on a pot with water, salt the boiling water. The dough "scrape" in portions with one of the above options. The noodles are done when they float up. drain with a slotted spoon and let it warm.

melt in a small skillet over low heat the butter and put the sage leaves, so that the butter takes on the flavor. Pour over the noodles and serve as a side dish.

If the pumpkin dumplings as an appetizer or even main dish to be served, fits to fresh grated / shaved Parmesan.

Bon appetit!
